Cauliflower Fried Rice

Cauliflower fried rice

1 cup grated raw cauliflower

1/4 cup egg beaters (or egg whites)

1/2 cup reduced fat cheese

1/8 tsp garlic powder

1/4 tsp basil

 

Combine all ingredients and pour on parchment paper sprayed with non stick cooking spray.  Spread out thinly until about the size of a plate.

Bake at 425 for 30 min.  Flip over and bake 10 more minutes.  Remove from oven.  Add toppings and broil until cheese is melted.
